I’m Baking, Yet Again: Cioccolatini

Ever get those pesky, after-dinner chocolate cravings yet are trying to stay healthy and not indulge? Normally I would simply have a piece of dark chocolate with my cup of tea to cover the cravings but my mom came up with a little creation that satisfies my sweet tooth just a little bit more. WARNING: these are addicting. We have made them just about every week since.

Dark Chocolate Covered Toasted Coconut Bites

Ingredients:

Ghiardelli 60% Bittersweet Chocolate Chips (or darker)

Unsweetneded Coconut

Simple as that, two ingredients.

Simply melt about a half of a bag of the chocolate chips slowly until smooth, strring occasionally. While the chocolate is melting, toast the coconut in the oven on a sheet of parchment paper or foil. Watch carefully as it toasts, it will burn easily. As it toasts, occasionally turn it over with a spatula to ensure even toasting.

Dark Chocolate Covered Toasted Coconut Bites

When the coconut is toasted to your liking, add the coconut to your melted dark chocolate and stir until it is evenly coated. You can even add other things to match your cravings like almonds, nuts, or even pomegranate seeds. Scoop spoonfulls onto a cookie sheet (width small enough to fit in your refrigerator) with parchment paper to prevent sticking. Let them cool in the fridge until set and then enjoy! Store the leftovers in an airtight container in the fridge, well…that’s if you have any. 🙂
