One of the things I love most is good seafood, oysters being one of them. I love the rich yet simple combination of flavors when you grill fresh quality oysters with some yummy garlic, lemon, and parmigiano, bubbling like crazy over an open fire. I promise this recipe will become a go to for a date night in or for company.
Serves 2, double for more people
Ingredients:
-12 fresh oysters, like Blue Point, shucked
-6 tbsp. of butter, melted
-3 cloves of garlic, minced
-3/4 cup of grated parmigiano
-2 tbsp. dry white wine, like Pinot Grigio
-1 tbsp freshly minced parsley
-Juice of half a lemon
-salt and pepper
-Optional: TRUFF Black Truffle Hot Sauce
In a small bowl, combine the melted butter, garlic, parm, parsley, lemon, and white wine. Season with salt and pepper.
Lay the oyster halves in a cast iron skillet, brushed with olive oil. Meanwhile, heat your grill as hot as it goes, about 600 degrees. Top the oysters with a spoonful of the garlic parm mixture. Grill until hot and bubbly, about 8-10 minutes. Top with a little more grated parm and TRUFF Black Hot sauce if you want it a little extra special.
