A staple in any household, a homemade caesar dressing is much more pure and flavorful than store-bought. Don’t be intimidated by the anchovies or raw eggs–you will be pleasantly surprised! It not only is a lovely side dish for a dinner party but also makes for a great weeknight meal when you top with chicken or shrimp.
Caesar Salad Dressing Recipe
Ingredients:
- 2 egg yolks
- 3/4 tsp. dijon mustard
- 2 cloves of garlic
- 6 anchovy filets in oil, drained
- 1/2 cup plus 2 tbsp. of evoo
- 2 tbsp. fresh lemon juice
- kosher salt and fresh black pepper
- Freshly grated parmigiano reggiano
Chop the anchovy filets with the garlic, and a pinch of salt smearing the side of the knife over and over until it becomes a paste. Place the paste in a bowl. Whisk in the eggs yolks, dijon, and lemon juice until combined. Slowly add in the evoo whisking constantly as you go. Season with a pinch of salt and pepper as well as the parmigiano. Voila! You made a fresh, traditional caesar dressing. 🙂
