“New Year, New You”. That’s all everyone thinks of in January. I’ve personally made an effort to transform my lifestyle, rather than diet. My sister inspired me to try a Paleo diet, and I’m hooked. It is a ‘diet’ that doesn’t make you feel deprived. It’s high in protein and nutritious vegetables. Here is my version of a paleo fried rice. 🙂 My boyfriend, Andrew, couldn’t believe it was rice. He thought it was even better!
Paleo Shrimp and Cauliflower Fried Rice – Trader Joe’s
Ingredients:
- 1 lb. uncooked shrimp–peeled & deveined
- 12 oz. frozen Trader Joe’s Riced Cauliflower, or your own
- 1/2 cup diced carrot
- 1/2 cup diced onion
- 1/2 cup frozen petite peas
- 3 cloves of garlic, minced
- 1/2 jalapeno, sliced thinly
- 1 tsp. sesame oil
- 2 tbsp. sweet chili sauce
- 1 tbsp. coconut aminos (replaces soy sauce)
- Salt & Pepper
- 2 eggs, whisked together
- Extra Virgin Olive Oil
Directions:
Season your shrimp with salt and pepper in a bowl.
In a medium saute pan over medium heat, sear the shrimp in about 2 tbsp. of olive oil for about 2 minutes on each side. Set aside on a plate. In the hot pan, add your mixed eggs, stirring quickly with a wooden spoon to make small chunks. Set the egg aside on the same plate as the shrimp.
To the hot pan, add your carrot and onion. Saute until translucent and season with salt and pepper. Add in the garlic and cook for another minute, until fragrant. Add in your cauliflower and stir in the peas. Stir in the coconut aminos and sweet chili sauce until combined.
Add back in your cooked shrimp and egg and stir. Garnish with the jalapeno and serve. 🙂
