Searching for a fresh, summery appetizer for a dinner party this weekend, I decided to finally try this refreshing skewer appetizer that I had been longing to try. It makes a perfect, one bite sweet and savory option for your next cocktail party not to mention it is incredibly easy to throw together. Be weary, the mid aged men who tend to be not so adventurous probably won’t go for it. But the younger crowd and fit mid aged women will absolutely eat it up. It’s fit for foodies. 🙂
Ingredients:
(Amounts depend on how many guests you have, how many skewers you would like to make)
Fresh Watermelon
Fresh Greek Feta, the block that is soaked in water works the best
Fresh Mint Leaves
Balsamic Vinegar from Modena
Directions:
Cube the watermelon by sliving into 1 inch slices and createing 1 inch cubes with a sharp knife. This will be the base to your skewer, and can be done ahead of time if you’d like to clean up the mess. Wash your mint leaves, plucked from the stems and set aside on a paper towel to dry.
Meanwhile, heat the balsamic in a small saucepan over medium-high heat until it just boils, then reduce to low and simmer until it thickens, about 5-7 minutes. Remove from heat.
Cube the feta in the same manner, being careful not to cruble it to the best of your ability.
To assemble the skewers, place a cube of watermelon on the platter. Top with a mint leave, then the feta. Place a skewer through the tower carefully, being sure not to crumble the feta. To finish, drizzle the cooled balsamic reduction over the skewers and serve.
