Walking through the market today, my eyes were drawn to the fresh gnocchi an older Italian woman was selling. It looked so fresh and instantly I knew I was buying some. This is one of my favorite ways to prepare gnocchi! It was my roommates first time having gnocchi as well and she absolutely loved it!
Ingredients:
- 2 tbsp. butter
- 2 tbsp. all purpose flour
- 1 1/2 cups of milk + more if needed
- gnocchi ( the fresher the better)
- 0.15 kg gorgonzola estimate
Boil a pot of water. Then once melt the butter over a medium low heat. Once melted completely, add flour a little at a time until a thicker consistency but not clumpy. Once your water is boiling, add gnocchi. If it is fresh, it only needs to cook for 2-3 minutes. Drain and set to the side.
To the butter mixture, add milk little by little while stirring to incorporate. Let simmer on low heat while stirring for a few minutes. Then, add the gorgonzola and stir until melted. Season with salt & pepper.
Toss the gnocchi in the sauce and serve warm. If you have it available, chop some fresh sage and throw in the sauce last minute. Such a good combination of flavors!
